INGREDIENTS:
1 cup wholemeal self raising flour
½ cup coconut oil
½ cup brown sugar
2 Tbsp flaxseed meal
2 Tbsp water
1 egg
1 Tsp vanilla extract
1 tsp cinnamon
2 Tbsp brewers yeast*
½ tsp salt
1.5 cups oats
¼ cup sultanas, dates or dried apricots (chopped)
¼ cup shredded coconut
¼ cup dark chocolate chips
In a large mixing bowl, cream the butter and sugar, then add the egg and vanilla. Mix well.
In a separate bowl, combine the flaxseed and water, let them sit for a few minutes before adding to mix (they should swell and become gel-like. Stir a few times to help the process along).
Add the dry ingredients and mix well again until all combined.
Make the biscuits a heaped dessert spoon size and place them onto a lightly greased or lined baking tray. Flatten slightly with the back of a fork.
Bake for 10-12 minutes, until golden on the edges.
Brew a cup of Mother's Milk Breastfeeding Support Blend while your cookies cool, then enjoy together (though preferably keep the hot tea for drinking when your babe is NOT in your arms ;)
*Make sure you get Brewers Yeast and not any other type of yeast (eg. baker's yeast). You can purchase Brewer's yeast in most health food shops.
