This is my absolute favourite Lactation Cookie recipe - and I don't mean that lightly!! Some of the best things about these cookies:
1 / They're packed with nutrient dense calories
2 / They can be eaten one-handed; and
3/ Because they brown so beautifully on the outside, whilst staying chewy on the inside, the crumbs you inevitably drop on your babies head while they feed are soft, not scratchy. Perfect.
Lactation cookies (makes 16)
1 cup wholemeal self raising flour ½ cup coconut oil ½ cup brown sugar 2 Tbsp flaxseed meal 2 Tbsp water 1 egg 1 Tsp vanilla extract 1 tsp cinnamon 2 Tbsp brewers yeast* ½ tsp salt 1.5 cups oats ¼ cup sultanas, dates or dried apricots (chopped) ¼ cup shredded coconut ¼ cup dark chocolate chips In a large mixing bowl, cream the butter and sugar, then add the egg and vanilla. Mix well.
In a separate bowl, combine the flaxseed and water, let them sit for a few minutes before adding to mix (they should swell and become gel-like. Stir a few times to help the process along).
Add the dry ingredients and mix well again until all combined.
Make the biscuits a heaped dessert spoon size and place them onto a lightly greased or lined baking tray. Flatten slightly with the back of a fork.
Bake for 10-12 minutes, until golden on the edges.
